This is so
simple, and yet delicious. It improves with standing, and can be eaten warm, or
cold as a salad.
Ingredients
> 700-800 grams fine
green beans (I use frozen)
> 1 large onion
> 4 tomatoes
> ¼ cup olive oil
> ½ tsp sugar
> Salt and freshly ground
pepper

Steps
1. Place the beans in a saucepan.
2. Put the tomatoes in a bowl and pour boiling
water over them.
3. Leave for one minute, then drain and peel
the tomatoes.
4. Chop them and put them in the saucepan.
5. Peel and thinly slice the onion, and add to
the pan.
6. Pour over the olive oil, and add the sugar,
salt and pepper.
7. Cover the pan and cook on a moderate heat
until it comes to the boil, and then turn the heat down and simmer for about
30 minutes, until the beans are cooked and tender.
